Can I get the deleted pages back?

Not from the output file — deletion rebuilds the PDF without them. Your original file on disk is never modified, so keep it until you have checked the result.

Do page numbers printed on the page update?

No. Numbers that were printed into the page content stay as they were. If you need a clean sequence afterwards, run the result through Page Numbers.
